Tasting Notes
In the glass, the 2022 Norheimer Kirschheck Spätlese shines a pale lemon to light straw with green reflections, signaling freshness and youth. The nose is finely etched and aromatic rather than showy, with notes of white blossom, lime zest, crunchy green apple and ripe pear, joined by hints of white peach, wet slate and a gentle herbal lift. There is an impression of crystalline clarity, where fruit and minerality are perfectly intertwined.
On the palate, this is light, refined and very elegant, with a dancing, almost airy texture. The sweetness is beautifully judged and seamlessly integrated, wrapped around a vibrant core of citrus and orchard fruit. Delicate flavors of lime, quince, white peach and green apple are supported by a fine phenolic grip and a saline, stony backbone that drives the wine through to a long, precise and ultra-clean finish. The balance of fruit, acidity and residual sugar suggests excellent aging potential: while already charming and approachable now, it will develop greater complexity, honeyed nuances and more pronounced mineral depth over the next 10–20 years and beyond when well cellared.
Production
Norheimer Kirschheck is a steep, south to southwest-facing vineyard on the Nahe River, characterized by weathered slate and quartzite soils that yield Rieslings of finesse, cool precision and mineral clarity. Dönnhoff farms these vineyards with great care, focusing on low yields, selective hand-harvesting and multiple passes at harvest to pick only perfectly ripe, healthy grapes at ideal Spätlese ripeness levels. In the cellar, the must is gently pressed and allowed to ferment slowly—typically in a combination of stainless steel and traditional large German oak (Stück) casks—with ambient or carefully selected yeasts. Fermentation is stopped at the point where natural sweetness and acidity are in perfect harmony, preserving the vineyard’s distinctive character and ensuring a light-footed, finely textured wine.
Food & Serving
This Spätlese is a versatile partner at the table, pairing beautifully with lightly spiced Asian dishes (such as Thai or Vietnamese cuisine), sashimi and sushi, or aromatic seafood preparations like scallops, prawns or steamed white fish with ginger and herbs. It is also superb with soft cheeses, fresh goat cheese, lightly aged semi-hard cheeses or dishes that combine fruit and savory elements, such as roast poultry with citrus or apple. Serve well-chilled, ideally at 8–10°C (46–50°F), to emphasize its freshness and precision. Decanting is not necessary, but opening the bottle 15–20 minutes before serving allows the aromatics to unfurl gently in the glass.
