This Auslese represents a more concentrated, nobly selected expression of the estate’s celebrated Spätlese, capturing the purity and precision of the Nahe in a richly layered, yet beautifully airy style.
Tasting Notes
In the glass, the 2023 Hermannshöhle Auslese GK shows a bright, shimmering lemon-gold hue with silvery highlights that hint at both youth and vibrancy. The nose is immediately engaging, with delicate smoke, ripe Reine Claude (greengage) plum compote and crystalline citrus tones, wrapped in a fine veil of blossom and herbal tea notes. Subtle hints of mint and dried herbs emerge with air, adding a cooling, refined complexity.
On the palate, the wine is concentrated yet feather-light, balancing deep, ripe citrus and stone-fruit sweetness with laser-like acidity. Layers of plum, candied lemon peel and white peach are edged by a clear, zesty lemon core that keeps everything precise and refreshing. The sweetness is gentle and caressing rather than heavy, with a lifted herbal-tisane and minty nuance on the finish that adds both length and elegance. This Auslese is already captivating in its youth, but has excellent aging potential; over 15–30 years, it will develop further complexity, with notes of honey, dried apricot and spice while retaining its trademark freshness.
Production
Niederhäuser Hermannshöhle is Dönnhoff’s flagship vineyard on the Nahe, a steep, south-facing site with ancient, weathered grey slate and volcanic porphyry soils that provide outstanding drainage and mineral richness. The combination of steep exposition and river influence creates a unique mesoclimate, allowing Riesling grapes to ripen slowly, building intense flavor while preserving acidity. For the Auslese Goldkapsel, the grapes are carefully hand-harvested in multiple passes (selective picking), focusing on optimally ripe and partially passerillé (shrivelled) berries that deliver extra concentration and purity. In the cellar, Dönnhoff vinifies with great restraint: gentle pressing, cool fermentation—often in a mix of stainless steel and large traditional German oak (Stückfass)—and a long, calm élevage to preserve delicacy, balance and the vineyard’s signature minerality. The result is a sweet wine of great clarity and precision rather than opulence alone.
Food & Serving
This Auslese shines with refined, not overly sweet dishes that can match its intensity and acidity. Think citrus or stone-fruit based desserts (lemon tart, apricot tart, poached pears), blue cheeses such as Roquefort or Stilton, or savory-sweet combinations like roast duck with orange glaze or spicy Asian cuisine where the sweetness tempers heat (Thai, Szechuan, or Vietnamese dishes with chili and ginger). Serve well-chilled, ideally at 8–10°C (46–50°F), to keep the balance fresh and the aromatics focused. Decanting is not necessary, but opening the half-bottle 15–20 minutes before serving allows the subtle smoky, herbal and stone-fruit notes to fully unfold.
