Tasting Notes
In the glass, this Auslese shimmers a bright, pale gold, hinting at both youth and density. The nose opens slowly and thoughtfully, at first quite reticent, then gradually revealing layers of ripe apricot, yellow peach and mandarin peel. With air, a vibrant citrus spectrum emerges—lime, lemon and a touch of candied lemon—accented by crushed chamomile and delicate floral notes that underline its finesse rather than opulence.
On the palate, the defining character is Riesling purity rather than botrytis weight. The sweetness is clearly present yet feels toned, transparent and finely etched, gliding across the tongue with silken texture. Intensely flavored yet featherlight, it delivers a precise core of stone fruit, citrus oil and grapefruit zest, supported by a racy, filigreed acidity that keeps everything lifted and energetic. The finish is long, calm and quietly persistent, leaving a lingering impression of citrus spice, herbs and cool minerality. While already deeply charming, this wine is built to evolve beautifully for 20–30 years or more in a good cellar, gaining complexity, honeyed nuance and tertiary depth over time.
Production
Sourced from the famed Niederhäuser Hermannshöhle vineyard on the Nahe, this Auslese comes from steep, south-facing slopes rooted in a complex mix of slate, volcanic porphyry and limestone—terroir that gives both intensity and unmistakable minerality. The old vines are meticulously tended and hand-harvested, with multiple passes (selective picking) to capture perfectly ripe and partly shriveled Riesling berries at Auslese level, with botrytis playing a supporting rather than dominant role. In the cellar, Dönnhoff works with a gentle, minimalist philosophy: careful pressing, slow, cool fermentation (typically in a combination of stainless steel and large, old German oak casks), and extended lees contact to enhance texture while preserving clarity. The result is a sweet wine that is as much about precision and terroir expression as it is about richness.
Food & Serving
This sweet Auslese is a superb companion to refined desserts and savory dishes alike. Try it with fruit-based desserts such as apricot tart, lemon panna cotta, baked apple or almond cake, as well as blue cheeses (Roquefort, Stilton) or aged, nutty hard cheeses. It also shines with spicy Asian cuisine—think Thai dishes with chili and lime, or lightly spiced duck and pork with aromatic glazes—where the sweetness and acidity work in tandem to balance heat and richness. Serve lightly chilled at around 8–10 °C. Decanting is not essential, but opening the bottle 30–60 minutes in advance or gently swirling in the glass helps the wine unfurl its layered aromas, especially in its youth.
