Tasting Notes
In the glass, the 2021 Felsenberg GG is pale straw with green reflections, signaling its youth and vibrancy. The nose is pure, bright and flinty, opening with smoky stone, crushed rock and iodine, then unfurling notes of lemon zest, grapefruit pith, white peach and subtle herbs. Beneath the mineral core lies a fine phenolic complexity, giving the aroma both depth and a touch of savory intrigue.
On the palate, it is full in flavor yet remarkably refined and light on its feet. A compact core of ripe citrus and stone fruit is wrapped in a sleek, crystalline acidity that drives the wine from start to finish. The texture is dense but finely woven, with discreet tannic grip that’s less pronounced than in Dönnhoff’s Höllenpfad, allowing the juicy fruit and salty minerality to shine. The finish is long, saline and precise, with delicate lemon bitterness and lush, mouth‑watering fruit that lingers. While already dangerously drinkable, this 2021 clearly has the structure to age beautifully for 10–15+ years, gaining further complexity, spice and tertiary nuance with time in the cellar.
Production
Felsenberg is a steep, terraced site above the Nahe river, marked by weathered volcanic porphyry soils that give the wine its signature smoky, flinty character and pronounced mineral drive. Dönnhoff farms these old Riesling vines meticulously, typically harvesting by hand in multiple passes to ensure perfect ripeness and pristine fruit. In the cellar, the grapes are gently pressed, and the must is allowed a slow, cool fermentation—often in a combination of stainless steel and large, neutral German oak (Stückfass)—to preserve purity while adding subtle texture. The wine is then left on fine lees to build complexity and harmony before bottling under natural cork.
Food & Serving
This is a superb gastronomic Riesling that pairs beautifully with refined, subtly aromatic dishes. Think shellfish (especially scallops, langoustines and oysters), grilled or roasted white fish, sashimi or crudo, poultry with citrus or herb accents, and vegetable‑driven cuisine such as asparagus, fennel or leek dishes. It also works wonderfully with lightly spiced Asian cuisine where freshness and umami play a role. Serve at around 9–11°C (48–52°F) to highlight its precision and minerality. Young bottles benefit from 30–60 minutes in a decanter or large glass to allow the flinty, smoky nuances and layered fruit to fully emerge.
