Tasting Notes
In the glass, the 2020 Dominus pours an opaque, inky purple with a dense, almost black core and a narrow garnet rim, signaling concentration and youth. The nose opens with pure blackcurrant and ripe blackberry, layered with notes of dark plum, crème de cassis, and graphite, followed by hints of mocha, dark chocolate, cedar, tobacco leaf, and subtle baking spice. On the palate, this is full-bodied and richly textured, with a velvety, mouth-coating feel that remains beautifully balanced. Ripe blackcurrant, blackberry and black cherry are framed by fine, persistent tannins, while warm vintage notes show in a touch of plush sweetness and generosity at mid-palate. Mocha, cocoa nibs, pencil shavings and a savoury, almost mineral edge add complexity on the long, silky finish. While already open and alluring in its youth, especially from the 3 L format, it has the structure to evolve gracefully for 15–25 years under proper cellaring.

Production
Sourced from Dominus Estate’s historic Napanook vineyard in Yountville, in the heart of Napa Valley, the 2020 vintage reflects a warm, dry growing season on gravelly, well-drained soils that naturally limit yields and intensify flavour. The vines are dry-farmed to encourage deep root systems and true expression of terroir, with careful, primarily manual work in the vineyard including canopy management and selective hand-harvesting at optimal ripeness. In the cellar, each parcel is vinified separately, with gentle extraction to preserve finesse and avoid over-extraction in this warm year. The wine is then aged in French oak barrels (a portion new, with the remainder seasoned oak) to integrate tannins and add subtle notes of spice and toast, before blending and bottling to create the final, cohesive cuvée.

Food & Serving
This generous yet structured Cabernet-dominant blend is an excellent partner for richly flavoured, protein-driven dishes: think grilled or dry-aged ribeye, roast lamb with rosemary and garlic, braised short ribs, or game such as venison. It also pairs beautifully with truffled dishes, mushroom ragùs, and hard, aged cheeses like Comté, mature cheddar or Parmigiano-Reggiano. Serve at 16–18°C (60–64°F) and, given the youth and concentration of the 2020 vintage, decanting is strongly recommended—at least 1–2 hours for immediate enjoyment, and longer (up to 3 hours) if serving at a special occasion from this 3 L bottle.
