Crafted by Peter Sisseck from a blend of Tempranillo and Garnacha, it offers remarkable depth and precision, with the added charm and aging potential that magnums are known for.

Tasting Notes
In the glass, PSI 2021 shows a deep, dark color that hints at its richness. The nose is expressive and layered, with ripe blackcurrant, violet, and graphite at the forefront, followed by juicy notes of red plum, blackberry, and cherry. The palate is full-bodied and generous, yet it keeps its balance through bright acidity and a fresh mineral streak. The tannins are ripe and polished, giving the wine structure without heaviness. While already highly appealing, the wine has the concentration and framework to evolve gracefully over the next several years.

Production
PSI 2021 is made from very old vines in Castilla y León, drawing character from a terroir that naturally delivers low yields and intense flavor concentration. The blend is composed of approximately 90% Tempranillo and 10% Garnacha. Fermentation takes place in concrete and stainless steel, with most of the wine remaining in neutral vessels, while a smaller portion is aged for 14 months in French oak, including a limited amount of new wood. The wine is then matured further to achieve added depth and texture, with 18 months overall in used Dominio de Pingus barrels contributing refinement rather than overt oak character.

Food & Serving
This is an excellent match for rich meat dishes such as roasted lamb, beef tenderloin, braised short ribs, or game. It also works beautifully with mature hard cheeses and hearty mushroom dishes. Serve at around 16–18°C, and consider decanting for 1–2 hours if you want to soften the tannins and let the aromas open fully.
