Description
Flor de Pingus 2021 Magnum is one of the standout value wines from Dominio de Pingus, capturing much of the depth and elegance associated with the estate’s flagship bottling. Made from old-vine Tempranillo in Castilla y León, it combines ripe fruit, mineral precision, and polished oak influence in a style that reflects Peter Sisseck’s acclaimed winemaking philosophy.
Tasting Notes
Deep ruby in the glass, Flor de Pingus 2021 opens with a generous, expressive nose of plum, violet, wild herbs, and warm spice, lifted by a subtle saline edge. The palate is full-bodied and powerful, yet balanced by freshness and a quietly mineral core that keeps the wine poised and refined.
French oak adds notes of sweet spice and structure without overwhelming the fruit, while the tannins remain supple and well integrated. This is a wine with excellent aging potential, and the Magnum format offers even greater development over time, rewarding patience with added complexity and nuance.
Production
The grapes come from partially leased vineyards near Barrosso and San Cristóbal, close to the parcels that supply Pingus, with vines averaging around 60 years of age. These deep-rooted old vines thrive in the dry Castilian climate, drawing mineral character from the soils while resisting summer stress thanks to the moisture stored through winter.
The winemaking is deliberately hands-off, with a proportion of whole clusters included and fermentation taking place in 2,000-liter oak vats. The wine is aged for 14 months in a mix of new French oak and seasoned barrels previously used for Flor de Pingus and Pingus, and it is bottled without fining or filtration.
Food & Serving
Flor de Pingus 2021 Magnum pairs beautifully with roasted lamb, grilled ribeye, slow-braised beef, venison, and rich mushroom dishes. It also works well with aged Manchego or other firm Spanish cheeses. Serve at 16–18°C, and decant for 1–2 hours if drinking young to allow the aromatics and structure to fully open up.
