The traditional blend of Corvina, Rondinella and Molinara is harvested predominantly by hand to ensure only healthy, ripe bunches reach the cellar. Fermentation typically takes place in temperature-controlled stainless-steel tanks to preserve the wine’s bright fruit profile, followed by a period of maturation—often in large oak casks or neutral vessels—to gently refine tannins and add complexity without dominating the wine’s pure, varietal character.
