Domini Veneti Pruviniano Ripasso 2020 is a richly textured Valpolicella Ripasso that showcases some of the finest vineyards in the Marano valley, at the heart of Valpolicella Classica. Crafted from Corvina, Corvinone and Rondinella, it captures the generous fruit, spice and structure that have made Ripasso one of Veneto’s most beloved red styles. This cuvée is designed to reflect its hillside terroir and the traditional Ripasso technique, delivering depth and complexity without becoming heavy.

Tasting Notes
In the glass, this Ripasso shows a vibrant, deep ruby-red colour with garnet hues at the rim. The nose is inviting and expressive, with aromas of ripe dark berries, plum and prune, layered with sweet spices, black pepper, cocoa and a hint of dark chocolate. On the palate, it is dry and savoury with a distinct spicy character. The fruit is generous yet balanced by fresh acidity and lively, well-structured tannins. Flavours of dark cherries, dried fruit and sultanas are intertwined with notes of roasted nuts, cocoa and gentle oak. The finish is long and warming, with lingering echoes of dried fruit and toasted hazelnut. Enjoyable now for its energy and richness, this Ripasso has the structure to develop further complexity over the next 5–7 years under proper cellaring conditions.

Production
The Pruviniano Ripasso is born in some of the best-exposed vineyards of the Marano valley, one of the historic crus of Valpolicella Classica in Veneto. The vines grow on hillside terraces with predominantly calcareous and clay-rich soils, which contribute to concentration, aromatic finesse and fresh acidity. Grapes are carefully selected and harvested by hand to ensure optimal ripeness and healthy bunches. The wine is first vinified as a classic Valpolicella, then undergoes the traditional Ripasso process, where it is refermented on the pomace of dried Amarone grapes to gain extra body, flavour intensity and texture. After fermentation, the wine is aged for a minimum of 9 months in oak barrels, allowing tannins to soften and the characteristic notes of spice, chocolate and dried fruit to integrate harmoniously.

Food & Serving
This is a superb food wine, particularly well-suited to rich, flavourful dishes. It shines alongside roasted or braised red meats, slow-cooked beef, lamb shanks, game stews, and hearty pasta with ragù. It also pairs beautifully with aged cheeses and mushroom-based dishes. Serve at 16–18°C to highlight the wine’s aromatic complexity and balance. Decanting for 30–45 minutes before serving is recommended, especially in its youth, to allow the Ripasso’s layered dark fruit and spice notes to fully open.
