Domini Veneti Amarone della Valpolicella Classico 2021 is a benchmark expression of one of Italy’s most prestigious red wines, combining richness, elegance, and firm structure in a classic Valpolicella style. Crafted from grapes grown in the historic Valpolicella Classica area and made using the traditional appassimento method, it reflects the philosophy that has made Domini Veneti a reference point for Amarone.

Tasting Notes
In the glass, it shows the deep, concentrated color expected of Amarone, with a dense, polished appearance. The bouquet is typically layered and expressive, with aromas of dried cherry, black plum, fig, cocoa, sweet spice, and a subtle balsamic note. On the palate, it is full-bodied and powerful yet balanced, with ripe dark fruit, notes of raisin and spice, and a refined tannic frame that supports impressive depth. The long ageing in large oak casks adds complexity and texture without overpowering the fruit. This is a wine with strong ageing potential and should develop beautifully over the next decade or more.

Production
The grapes come from the Valpolicella Classica zone in Veneto, a historic hillside area well suited to premium Amarone production. After harvest, the fruit is dried in special drying lofts to concentrate sugar, aroma, and flavor before fermentation. The wine is then matured in large oak casks for at least 18 months, followed by a further 6 to 8 months of bottle ageing to bring balance and harmony.

Food & Serving
This Amarone pairs wonderfully with rich dishes such as braised beef, game, roasted meats, mature hard cheeses, and truffle-based recipes. It also works beautifully alongside slow-cooked pasta dishes and hearty risottos. Serve at around 16–18°C, and decant for at least 1 hour before serving to allow the wine to open fully.
