Tasting Notes
In the glass, the 2007 Pajana is deep garnet with a brick-tinged rim, beginning to show the graceful evolution of a mature Barolo while still holding a core of vibrant colour. The nose is wonderfully expressive: rose petals, violets and dried flowers meet plums, wild raspberries, redcurrants and a touch of sweet spice, with underlying notes of tar, licorice and crushed stone adding complexity.
