Crafted for long aging, this Barolo marries depth and structure with an almost sensual texture that slowly unfurls in the glass. The magnum (1.5 L) format further enhances its cellar potential, allowing the wine to evolve gracefully over decades.
Tasting Notes
In the glass, the 2012 Ciabot Mentin shows a deep garnet core with brick-tinged reflections beginning to emerge at the rim – a classic sign of evolving Barolo. The nose is intense and layered: dark cherry, black plum and macerated red berries mingle with notes of licorice, dried rose petals, tar, smoked tea, and a distinct ferrous/iron-mineral edge. Hints of tobacco leaf, leather, and dried herbs add complexity as it opens.
On the palate, the wine is full-bodied yet remarkably poised, with a broad, enveloping texture that glides over the tongue. Dark fruit—black cherry, blackberry and blackcurrant—interplays with savory tones of dried earth, truffle, and subtle balsamic nuances. The hallmark Nebbiolo tannins are firm, fine-grained and persistent, giving the wine both grip and elegance. The acidity is vibrant, lifting the fruit and keeping the finish long, precise, and mouthwatering, with lingering notes of smoke, licorice, and iron-rich minerality. In magnum, this 2012 has excellent aging potential: it is drinking beautifully now with a long decant, but will continue to develop greater tertiary complexity for another 10–15 years or more in proper cellar conditions.
Production
Ciabot Mentin comes from the Ginestra cru in Monforte d’Alba, one of Barolo’s most esteemed sites, known for its steep, south to southeast-facing slopes and compact clay-limestone (calcareous marl) soils rich in minerals. These conditions yield Nebbiolo of notable concentration, structure, and aromatic intensity. The grapes are typically hand-harvested at optimal ripeness to preserve both power and freshness, with strict selection in the vineyard and cellar. Vinification traditionally involves a long maceration on the skins to extract color, tannin, and aromatic complexity, followed by extended aging in oak (often a combination of barriques and larger casks) to refine the structure without overshadowing the terroir. Bottled in magnum, the slower evolution ensures a particularly refined and harmonious maturity.
Food & Serving
This Barolo is a superb partner for rich, savory dishes: think braised beef or veal shank (ossobuco), slow-cooked lamb shoulder, game birds, and truffle-infused preparations. Classic Piedmontese dishes like brasato al Barolo, tajarin with white truffle, or porcini mushroom risotto highlight its earthy, savory side. Mature hard cheeses such as Parmigiano Reggiano, aged Asiago, or Castelmagno also pair beautifully. Serve at 16–18°C (about 60–64°F). For a 2012 magnum, decanting for 2–3 hours is highly recommended to allow the wine to fully open up; in its youth or if served cooler, you may even extend decanting to 4 hours.
