Domaines Ott’s By.Ott Rosé is a refined Côtes de Provence rosé that combines the elegance associated with the estate’s historic wines with a fresh, approachable style. Sourced largely from the renowned Château de Selle and Clos Mireille vineyards, it offers a polished expression of Provence with impressive consistency from vintage to vintage.

Tasting Notes
Pale salmon-pink in appearance, By.Ott Rosé is bright and inviting in the glass. The nose is delicately perfumed, revealing aromas of red berries, peach and citrus alongside subtle floral notes. On the palate, it is fresh and finely balanced, with flavours of strawberries, redcurrants and ripe stone fruit supported by a crisp, elegant finish. The wine is designed to be enjoyed in its youth, when its fruit, freshness and finesse are at their most expressive, although careful short-term cellaring is possible.

Production
The grapes are sourced from selected vineyards in Côtes de Provence, including Château de Selle and Clos Mireille, sites known for producing wines of notable finesse and complexity. The cuvée is vinified and bottled at the modern winery at Château de Selle, where the entire process—from blending through to storage—is closely controlled to ensure a consistent expression. The stated blend is predominantly Grenache, complemented by Cinsault, Syrah and Mourvèdre.

Food & Serving
Serve By.Ott Rosé well chilled, at approximately 8–10°C. Its freshness and delicate fruit make it a versatile partner for Provençal cuisine, grilled fish, prawns, sushi, salads, fresh goat’s cheese and light Mediterranean dishes. Decanting is not necessary; simply chill the bottle and serve immediately, or allow it a few minutes in the glass to reveal more of its aromatics.
