Domaine Valinière’s Pays Double Ripasse 2024 is a distinctive French red wine made using a rare double-vinification technique. Rich, powerful and deeply coloured, it stands out for its intense concentration, ripe fruit character and remarkably velvety tannins.

Tasting Notes
The wine displays a deep purple colour with vivid violet highlights. Its expressive bouquet combines aromas of very ripe red and black berries with blackberry, plum and warm spicy nuances. On the palate, it is full-bodied, concentrated and complex, offering generous dark-fruit flavours and a long, persistent finish. The tannins are ripe, seductive and silky, giving the wine an elegant texture despite its considerable power. It is approachable in its youth, but its structure and concentration should allow it to develop further over the next few years.

Production
The defining feature of Double Ripasse is its unusual two-stage vinification. Fermented must from optimally ripe grapes is fermented a second time on the skins of overripe grapes, increasing colour, extraction and concentration while adding mature, developed aromas and flavours. Its rich fruit, depth and polished tannins make it a natural partner for grilled or slow-cooked red meats, roast lamb, beef stew, game and hearty mushroom dishes.
