Domaine Tony Bornard’s Ploussard “Au fil des générations” is an expressive Jura red made from Poulsard, the region’s delicately coloured yet characterful native grape. The 2022 vintage showcases the variety’s signature combination of lightness, freshness and earthy complexity, offering an elegant alternative to fuller-bodied reds.

Tasting Notes
Pale ruby in appearance, this wine is typically translucent in the glass, reflecting Poulsard’s naturally delicate pigmentation. The nose is fragrant and lifted, with aromas of wild red berries, sour cherry, dried flowers and subtle woodland spice. On the palate, it is light to medium-bodied with vibrant acidity, fine tannins and a gently savoury finish. Expect flavours of redcurrant, cranberry and raspberry alongside earthy, peppery nuances. While delicious in its youth, the wine can develop added savoury and tertiary complexity over the next few years when properly stored.

Production
Sourced from Jura vineyards and crafted from Poulsard, a grape particularly well suited to the region’s cool continental climate and limestone-influenced soils. The style prioritises freshness, transparency and the character of the fruit, with careful vinification intended to preserve Poulsard’s perfume and subtle structure rather than impose heavy extraction or oak influence.

Food & Serving
Serve lightly chilled, around 14–16°C, to highlight the wine’s freshness and aromatic character. It pairs beautifully with charcuterie, roast poultry, pork, grilled sausages, mushroom dishes and Jura specialities such as Comté. A short period of aeration can help open the wine, while full decanting is generally unnecessary unless the bottle shows reduction or sediment.
