In the glass, the 2021 Romanée-Saint-Vivant shows a full, radiant ruby-red hue, hinting at concentration while retaining classic Burgundian translucency. The nose is immediately seductive, unfurling aromas of mocha, ripe blackcurrant and crushed blackberry, interwoven with roasted almonds, fine spice and a whisper of rose petal and damp earth.
On the palate, the wine is generously proportioned yet effortlessly graceful, with a lively, finely etched structure. Layers of almond, blackcurrant and dark cherry are framed by silky tannins and fresh acidity, giving both immediate charm and underlying tension. Production
Romanée-Saint-Vivant sits on the eastern slope of Vosne-Romanée, where fine limestone and clay-limestone soils, excellent drainage and a sheltered, sun-kissed exposure combine to produce Pinot Noir of haunting perfume and finesse. The Cathiard holding in the revered “Les Quatre Journaux” sector benefits from low-yielding old vines that are carefully tended, typically with meticulous, largely manual vineyard work and strict green harvesting to concentrate quality. Harvest is carried out by hand, with rigorous sorting to ensure only pristine fruit makes it to the cellar. Vinification traditionally involves cold maceration, gentle extraction and fermentation in small vats, followed by élevage in French oak barrels (with a judicious proportion of new oak) to enhance texture and complexity without overwhelming the purity of the fruit or the distinct Romanée-Saint-Vivant character.
Food & Serving
This is a contemplative wine best paired with refined, delicately flavored dishes that respect its complexity. Consider roast pigeon or duck breast, veal tenderloin with morel mushrooms, butter-basted turbot, or truffled poultry and earthy mushroom preparations. Mature hard cheeses such as Comté or aged Gruyère also make a superb match. Serve at 15–16°C (59–61°F) to highlight its aromatic detail and freshness. Decant gently for 30–60 minutes in its youth to let the bouquet fully open; with more bottle age, a brief, careful decant primarily to remove any sediment is recommended.
