Domaine Seguinot-Bordet’s Chablis Vieilles Vignes 2023 is a vivid, mineral-driven Chardonnay from some of the estate’s oldest vines, bringing extra depth, precision, and character to the classic Chablis style. Crafted by winemaker Jean-Francois Bordet, it reflects the restrained elegance and sea-breezed freshness that have made Chablis one of Burgundy’s most admired white wine appellations.
Tasting Notes
In the glass, it shows a pale golden hue with the signature green glint of youthful Chablis. The nose is bright and refined, with aromas of crisp green apple, oyster shell, jasmine, and a subtle oat-like note that adds a gentle savoury dimension.
On the palate, the wine is lively and focused, combining citrus freshness with a clear mineral backbone and an energetic, elegant texture. The old vines bring extra concentration and intensity, while the overall profile remains sleek and precise. Best enjoyed young, ideally within the next 3 years, while its freshness and tension are at their most expressive.
Production
Vieilles Vignes refers to the estate’s older Chardonnay vines, some of which are 55, 78, and even 106 years old, naturally yielding fruit with greater concentration and complexity. Grown in Chablis, where cool conditions and mineral-rich soils shape the region’s distinctive profile, the grapes are handled carefully by Jean-Francois Bordet to preserve purity, freshness, and the wine’s marked sense of place.
Food & Serving
This Chablis is a natural match for oysters, shellfish, sushi, grilled fish, and other delicate seafood dishes, but it also works beautifully with goat’s cheese or light poultry dishes. Serve well chilled, around 8–10°C, and decanting is not necessary.
