Tasting Notes
The wine shows a bright ruby colour. Its bouquet is expressive yet elegant, offering aromas of cherries and raspberries alongside subtle floral notes. On the palate, it is precise and finely balanced, with lively acidity, polished tannins and a long, mineral finish. This is a youthful Volnay with the structure and freshness to develop further in bottle. It can be enjoyed in its early, fruit-driven phase, while additional ageing should bring greater complexity and softness to the tannins.

The domaine’s parcels in Volnay Les Santenots lie on limestone-rich slopes, an important contributor to the wine’s freshness and mineral character. Domaine Rémi Jobard works fully organically and personally oversees both vineyard and cellar operations. The wine is made using traditional Burgundy methods with natural fermentation, followed by maturation in French oak barrels with a limited proportion of new wood, allowing the fruit, structure and terroir to remain in balance.

A versatile partner for poultry, veal and lightly prepared game, this Volnay also works beautifully with mushrooms or dishes accompanied by a refined jus or delicate sauce. Serve slightly cool, around 14–16°C. Decanting is not essential when serving young, though a brief 20–30 minute decant can help open the wine and reveal its floral and mineral nuances.
