Tasting Notes
In the glass, this Saint-Aubin 1er Cru is pale to medium lemon-gold, with a youthful brightness that hints at its energy and freshness. On the nose it opens with a refined mix of citrus zest and crisp green apple, layered with notes of warm brioche, toasted grain and a subtle dusting of nutmeg and spice. As it unfolds, delicate hints of crushed stone, white flowers and a touch of almond add complexity.
The palate is medium to full-bodied, layered and finely textured, balancing richness with an impeccable sense of control. Lively, fresh acidity runs through the wine, carrying flavours of lemon oil, tart apple, ripe pear and a gentle creaminess from its élevage. The oak is beautifully integrated, supporting rather than dominating, and the wine finishes long and precise, with a saline, mouthwatering edge. While already approachable and detailed, this 2019 has the structure and acidity to evolve gracefully for 8–12 years from vintage, gaining even more depth, savoury complexity and silkiness with time in bottle.
Production
Sourced from premier cru vineyards in Saint-Aubin, *Hommage à Marguerite* reflects the cool, limestone-rich slopes that sit just behind the more famous hills of Chassagne- and Puligny-Montrachet. These higher, well-drained sites, with rocky, marl and limestone soils, naturally give tension, minerality and aromatic lift to Chardonnay. Pierre-Yves Colin-Morey farms his parcels with great attention to detail, favouring low yields, careful canopy management and hand harvesting at optimal ripeness to preserve freshness and balance. In the cellar, whole bunches are pressed gently, and the juice is fermented with indigenous yeasts in mostly used French oak barrels, avoiding heavy new oak signatures. The wine then ages on its lees, with minimal bâtonnage, allowing complexity and texture to develop while retaining a firm, mineral backbone. Bottling is typically done without fining and with only light filtration to maintain purity and character.

This Saint-Aubin 1er Cru pairs beautifully with refined, delicately flavoured dishes that echo its precision and depth. Think poached or roasted turbot, halibut or cod, buttery sole meunière, seared scallops, or langoustines with a light beurre blanc. It also shines alongside roast chicken with herbs, guinea fowl, veal in a cream or morel sauce, or fresh goat’s cheese and mild, nutty cow’s milk cheeses like Comté or Beaufort. Serve at 10–12 °C (50–54 °F) to allow the aromatics to open gradually. Young bottles benefit from 30–45 minutes in a decanter or a larger glass to reveal their full complexity; more mature bottles can be handled more gently, with a brief aeration just before serving.
