Tasting Notes
In the glass, it shows a vivid ruby-red color. The nose is expressive and layered, with dark cherry, olive, truffle, smoke, gingerbread, and earthy undertones giving it a distinctly Burgundian profile. On the palate, the wine is sturdy and rustic in the best sense, with dark cherry, mocha, liquorice, and spice shaping a savory, terroir-driven finish. It has enough structure to age gracefully over the next few years, gaining additional complexity and nuance with time.

Production
This wine comes from 35-year-old Pinot Noir vines in Fixin, where the terroir sits close to Gevrey-Chambertin and benefits from a similarly prized Côte de Nuits setting. The grapes are harvested and sorted by hand, fully destemmed before pressing, and fermented with native yeasts. The wine is then matured for around 20 months in French oak barrels.

Food & Serving
This is an excellent match for roast duck, game birds, mushroom dishes, braised beef, and earthy vegetarian plates such as lentil or beetroot-based recipes. Serve slightly cool, ideally around 15–17°C, and consider decanting for about 30 minutes if drinking young to allow the aromas to open up.
