This cuvée is a benchmark for the new generation at Paul Pillot—classically rooted, but with a freshness and tension that feels distinctly modern.
Tasting Notes
In the glass, the 2019 Clos Saint-Jean shows a pale lemon-gold hue with bright reflections, hinting at both youth and concentration. The nose opens with delicate aromas of white flowers, fresh pear and crisp green apple, layered with nuances of beeswax, fresh bread dough and a faint touch of lemon zest and chalk.
On the palate, the wine is medium-bodied, taut and finely etched, with a ripe yet focused core of orchard fruit wrapped in vivid, mouth-watering acidity. Notes of pear, green apple and citrus peel meet subtle pastry and honeyed undertones, giving depth without ever feeling heavy. The finish is long, saline and precise, carried by a fine, chalky minerality. Already very approachable in its youth, this vintage has the structure and balance to evolve gracefully for 8–12 years from the vintage, gaining more complexity, creaminess and tertiary nuance with time in bottle.
Production
Clos Saint-Jean is a premier cru parcel on the Chassagne hillside, known for its well-drained limestone and clay soils and its favorable exposition, which brings ripeness while preserving tension. At Domaine Paul Pillot, the vines are farmed with great care, using sustainable, low-intervention practices and manual harvesting to ensure only perfectly healthy, ripe bunches reach the cellar. Grapes are typically gently pressed as whole clusters, then fermented with indigenous yeasts in oak barrels, a modest proportion of which are new. The wine is aged on its lees for about a year, with minimal bâtonnage to retain precision, and is only lightly filtered, if at all, at bottling to preserve character and texture.
Food & Serving
This Chassagne-Montrachet 1er Cru pairs beautifully with refined seafood and white meat dishes—think poached turbot with beurre blanc, scallops in a light cream sauce, roasted chicken with morel mushrooms, or veal in a delicate, buttery jus. It also shines alongside richer shellfish, such as lobster or langoustines, and aged Comté or mild goat cheeses. Serve at 10–12°C (50–54°F) to highlight its freshness and aromatics. Young bottles benefit from 30–45 minutes in a decanter or a few minutes in a large-bowled glass to allow the wine to open and reveal its full range of floral and mineral nuances.
