Description
Domaine Nathalie et Gilles Fèvre’s Chablis Premier Cru Fourchaume 2023 is a precise, terroir-driven Chardonnay from one of Chablis’s most renowned Premier Cru vineyards. Produced from organically farmed, mature vines rooted in Kimmeridgian limestone, it combines classic Chablis freshness with impressive depth and structure. Fourchaume is particularly prized for its ability to express the mineral character of the appellation, and the Fèvre family’s holdings here are among their most important vineyards.
Tasting Notes
The wine displays a bright, pale-gold colour. Its aroma is refined rather than overtly fruity, revealing notes of citrus zest, green apple, white flowers and subtle flinty nuances, with the mineral character becoming increasingly apparent as it opens in the glass.
On the palate, it is focused and energetic, with crisp acidity, a supple texture and flavours of lemon, pear, chalk and lightly saline minerals. The finish is long, dry and finely structured, showing the depth associated with mature vines and a distinguished Premier Cru site. It is approachable in its youth but should develop further complexity over the next 5–8 years, with careful cellaring.
Production
The organically farmed vines grow in the distinctive Kimmeridgian limestone and marl soils that define Chablis, giving the wine its characteristic freshness and mineral precision. The Fourchaume parcels include vines planted between 1942 and 1989, naturally limiting yields and helping to produce concentrated, site-expressive fruit. The wine is vinified with an emphasis on preserving the purity of the Chardonnay and allowing the vineyard character to take centre stage; production is deliberately limited, averaging around 30,000 bottles from the domaine’s substantial Fourchaume holdings.
Food & Serving
Serve lightly chilled at around 10–12°C. This Chablis is an excellent partner for oysters, shellfish, grilled or poached fish, scallops, sushi and seafood with creamy or lemon-based sauces. It also works well with goat’s cheese, poultry and delicate vegetable dishes. Decanting is not essential, but allowing the wine to breathe in the glass for 15–30 minutes—or giving a young bottle a brief decant—can help reveal its mineral depth and layered texture.

Domaine Nathalie et Gilles Fèvre is a family-run estate based in Chablis, where the Fèvre family has developed an important presence across the region’s finest vineyards. The domaine’s Fourchaume holdings cover around ten hectares and include notably old vines, yet production remains modest in relation to the size of the vineyard area. Their focus on organic cultivation, careful farming and restrained winemaking allows the character of Chablis’s Kimmeridgian soils to come through with clarity, making Fourchaume one of the estate’s most distinguished cuvées.
