Domaine Moreau-Naudet Chablis Pargues Vieilles Vignes 2021 is a beautifully expressive white Burgundy that captures the essence of old-vine Chardonnay in one of Chablis’ most coveted lieux-dits. This cuvée delivers a refined balance of ripe orchard fruit, shimmering minerality and vibrant acidity, making it both immediately charming and quietly serious. Sourced from old vines in Les Pargues, it offers a depth and texture that sets it apart from most village-level Chablis.
Tasting Notes
In the glass, the 2021 Chablis Pargues Vieilles Vignes shows a pale lemon hue with green reflections, hinting at its freshness and youth. The nose opens with pure aromas of pear and white peach, interlaced with clear honey, delicate floral notes and a subtle iodine-like sea breeze that is so typical of fine Chablis.
On the palate, this is medium to full-bodied, silky and lively, with a layered core of ripe stone and orchard fruits supported by bright, focused acidity. A chalky, saline minerality runs through the wine, giving it both tension and length. The finish is long, mineral-driven and delicately exotic, suggesting hints of honeyed citrus and ripe peach without ever feeling heavy. Enjoyable now for its energy and texture, it also has the structure to develop more complexity over the next 5–8 years under good cellaring conditions.
Production
Les Pargues lies just behind some of Chablis’ most famous premiers crus, on classic Kimmeridgian limestone and clay that imparts the region’s hallmark chalky, sea-spray minerality. Moreau-Naudet’s old vines (vieilles vignes) here are low-yielding and deeply rooted, drawing concentration and nuance from the soil. Grapes are typically harvested by hand to preserve berry integrity and carefully sorted before pressing. Fermentation takes place with a gentle, minimally interventionist approach—often using indigenous yeasts—followed by maturation on fine lees to build texture and complexity, usually in a mix of stainless steel and older oak to respect the purity of fruit and terroir rather than add overt wood influence.
Food & Serving
This Chablis is a natural match for seafood: think oysters, scallops, oysters Rockefeller, grilled prawns or simply prepared white fish with lemon and herbs. It also pairs beautifully with sushi, fresh goat’s cheese, light poultry dishes, and vegetable-based starters such as asparagus or fennel salad. Serve well chilled, ideally around 9–11°C (48–52°F). A short decant of 20–30 minutes, or simply pouring into large white wine glasses, can help the wine open up its layers of fruit and minerality.
