Description
Domaine Moreau-Naudet Chablis Grand Cru Valmur 2023 is a striking expression of top-tier Chablis, born from 60-year-old vines on a steep, sun-catching slope in one of the appellation’s most revered Grand Cru sites. Vinified entirely in stainless steel, it showcases the unadorned purity and tension of Chardonnay grown on classic Kimmeridgian limestone. Planted in a parcel adjacent to the famed Raveneau holdings, this Valmur is a testament to both pedigree and patience, with a structure built to reward cellaring.
Tasting Notes
In the glass, the 2023 Valmur presents a pale lemon-gold hue with green reflections, signaling both youth and vibrant acidity. The nose is deep and expressive, lifting from the glass with notes of beeswax, grapefruit zest and ripe pear, underpinned by hints of crushed oyster shell and a touch of chalky minerality that speaks clearly of Grand Cru Chablis.
On the palate, the wine is full-bodied and concentrated, with a remarkably layered mid-palate—richer and more expansive than most in the domaine’s range—while still retaining a precise, linear backbone. Flavors of citrus oil, fresh pear, white peach and subtle floral tones are knit together by a lively, mouthwatering acidity. The finish is long, saline and persistent, leaving a lingering impression of sea spray and stone. Though already impressive in its youth, this 2023 Valmur is structured for aging and will gain complexity, texture and nuance over 8–15 years, and potentially longer in a good cellar.
Production
The fruit for this Chablis Grand Cru Valmur 2023 comes from 60-year-old Chardonnay vines rooted in the classic Kimmeridgian limestone and marl that define Chablis’ finest terroirs. The parcel lies on a relatively steep slope within the Valmur Grand Cru, ensuring excellent drainage, optimal exposure and naturally low yields that concentrate flavor. Grapes are typically harvested by hand at optimal ripeness to preserve freshness and detail. In the cellar, the wine is vinified exclusively in stainless steel, a deliberate choice to highlight the purity of fruit and the mineral character of Valmur without the influence of oak. Gentle pressing and cool fermentation help retain aromatic intensity, while prolonged aging on fine lees builds texture and depth, culminating in a wine that marries power with precision.
Food & Serving
This Grand Cru Chablis is a superb match for refined seafood dishes such as scallops in a light butter or citrus sauce, turbot or sole, langoustines, and oysters—especially richer preparations where the wine’s structure and salinity can shine. It also pairs beautifully with lobster, roasted or poached poultry, veal in cream-based sauces and high-quality goat’s or soft-ripened cheeses. Serve at 10–12°C (50–54°F) to showcase both its tension and depth. In its youth, decanting for 30–60 minutes can help the wine open up aromatically and reveal its layered mid-palate; with bottle age, a gentle pour from the bottle is usually sufficient.
