Domaine Moreau-Naudet’s Chablis 1er Cru Vaillons 2023 in magnum format (1.5 L) captures the racy, chalk-driven elegance that has made this estate one of the most exciting names in modern Chablis. Sourced from venerable 60–77-year-old vines across four distinguished climats of Vaillons, including the prized Séchet, it delivers both concentration and finesse in equal measure. The magnum format further enhances its aging potential, making this a superb choice for the cellar or for the table when you want Chablis with extra presence and depth.
Tasting Notes
In the glass, the wine shows a pale lemon hue with a subtle green shimmer, hinting at both youth and intensity. The nose is immediately expressive and finely etched, with aromas of mandarin zest, white blossom, ripe pear and crushed oyster shell rising from the glass. Behind that, there’s a whisper of chalk dust and a touch of savory, marine complexity that is classic Vaillons.
On the palate, this is medium to full-bodied for Chablis 1er Cru, yet wonderfully precise and lifted. The old vines contribute a core of ripe, juicy citrus and orchard fruit, wrapped in a firm spine of chalky extract and mouthwatering acidity. Flavors of mandarin, pear, green apple and a touch of stone fruit are layered with saline, iodine notes and a long, mineral-driven finish. Compared to Beauregard it feels broader and more expansive, while remaining more succulent and vibrant than Montmains. Enjoyable in its youth for its generosity and energy, it should evolve beautifully over the next 6–10 years in magnum, gaining complexity and a more pronounced seashell and hazelnut nuance with time.
Production
Vaillons is one of Chablis’ benchmark Premier Cru slopes, with Kimmeridgian limestone and marl that give this Chardonnay its signature tension, salinity and fine-boned structure. Moreau-Naudet draws fruit from four climats within Vaillons, including the revered Séchet, with vines aged between 60 and 77 years that naturally yield small, concentrated berries. The grapes are hand-harvested to ensure optimal ripeness and careful selection, preserving both purity and the subtle differences of each site. Vinification is deliberately restrained and terroir-focused: around 70% of the must is fermented and raised in stainless steel tanks to lock in freshness and precision, while the remaining 30% matures in older 228-liter barrels and a few 600-liter foudres. This gentle use of neutral oak brings texture and complexity without masking the wine’s vibrant minerality and citrus-driven profile.
Food & Serving
This Chablis 1er Cru Vaillons is a natural partner for classic seafood dishes—think oysters, scallop ceviche, poached turbot, grilled sea bass or langoustines with beurre blanc. Its saline edge and chalky structure also work beautifully with sushi, sashimi, and delicately spiced Asian seafood, as well as fine poultry dishes such as roast chicken with lemon and herbs or veal in a light cream sauce. Creamy goat’s cheese, young Comté or mild, nutty alpine cheeses are also excellent matches. Serve at 10–12°C (50–54°F) to showcase both its aromatic detail and mineral backbone; in magnum, the wine benefits from a brief 30–45 minutes in a carafe when young to open up the aromatics, though older bottles should be handled more gently and may be served straight from the bottle.
