Tasting Notes
Pale gold in the glass, this wine opens with a lifted, inviting bouquet of citrus zest, green apple and white flowers. Subtle hints of fresh pear and a delicate mineral edge add complexity as the wine unfolds. On the palate it is fresh and lively, with clean acidity supporting a supple, medium-bodied structure. Ripe fruit, gentle nutty nuances and a finely stony salinity carry through to a long, harmonious finish. It can be enjoyed now for its purity and charm, but will also gain additional depth with a few years of cellaring.

Production
The Clos du Moulin site in Bourgogne Côte d'Or is defined by limestone and clay soils, a classic Burgundian terroir that gives Chardonnay both tension and texture. In 2021, careful vineyard work was essential after frost reduced yields, and the remaining grapes reached excellent quality. The wine reflects a vinification style aimed at preserving freshness, site expression and the natural balance of the vintage.

Food & Serving
This Chardonnay is well suited to dishes that echo its finesse and mineral profile, such as roast poultry, seared scallops, lobster, creamy risotto or simply prepared fish with a beurre blanc sauce. Serve at around 10-12°C to let the aromatics and texture show at their best. Decanting is generally not necessary, though a brief aeration can help if opened very young.
