Tasting Notes
In the glass, it shows a pale golden hue with a lively, polished brightness. The nose is immediately inviting, with citrus, grapefruit, fresh grass, flint, and a subtle hint of elderflower. The palate is crisp and refreshing, with clean fruit and a distinct mineral edge that gives the wine its signature tension and length. It is enjoyable on release, with the best drinking window over the first 4–5 years, when its freshness and purity are at their most expressive.

Production
The Sauvignon Blanc vines are rooted deeply in Sancerre’s chalk, marl, and flint-rich soils, which help shape the wine’s trademark freshness and stony mineral character. Thierry Merlin-Cherrier matures the wine for five months on the lees before bottling, allowing it to gain a little extra texture while preserving its vibrant, straight-forward style.

Food & Serving
An excellent match for goat’s cheese, oysters, shellfish, grilled fish, asparagus, and light salads. Serve well chilled at around 8–10°C, and decanting is not necessary; this wine is best enjoyed fresh and aromatic straight from the bottle.
