Production
Lucien Le Moine sources top-tier fruit from carefully selected Grand Cru parcels in Bonnes-Mares, one of the most prestigious vineyards in Burgundy, where the interplay of soil structure and microclimate can yield both depth and elegance. The wine is vinified in Beaune under the meticulous direction of Rotem and Mounir Saouma, who favor élevage on the lees in new classic Burgundian oak barrels, followed by manual racking and bottling without filtration. This approach is designed to preserve terroir expression while adding texture, dimension, and age-worthy structure.
Food & Serving
This wine is best served with refined dishes that can complement its depth and aromatic complexity, such as roast duck, pigeon, veal tenderloin, game birds, or earthy mushroom dishes. Serve at around 16-18°C, and decant gently if drinking young or if you want to open up its layered aromatics. For mature bottles, a shorter decant is usually enough to remove sediment and allow the wine to unfold naturally.
