This cuvée showcases how serious, structured and complex wines from southern France can be when low yields, meticulous farming and thoughtful élevage come together. Aurel Rouge has become one of the estate’s benchmark wines, helping to redefine the reputation of Languedoc from a value-driven region to a source of truly fine, cellar‑worthy reds.

Tasting Notes
In the glass, Aurel Rouge 2016 shows a deep garnet core with subtle brick hues beginning to appear at the rim, hinting at its evolution in bottle. The nose is layered and expressive, with dark berries, black cherry and plum wrapped in notes of garrigue herbs (thyme, rosemary, wild lavender), licorice, graphite and a touch of black pepper and warm stones. On the palate, the wine is full‑bodied yet poised, with Mourvèdre providing firm, finely grained tannins and a spine of freshness, while Grenache adds generosity and sweet-ripe fruit. Flavors of blackberry, blackcurrant and macerated cherry interweave with savory notes of tapenade, dried herbs, cocoa and a discreet, well‑integrated oak touch. The finish is long, mineral and slightly saline, suggesting both concentration and balance. While already drinking beautifully, the 2016 has the structure and acid-tannin balance to continue developing tertiary complexity—leather, game, truffle and dried flowers—over the next 8–12 years, depending on storage.

Vinification centers on gentle extraction—often via indigenous yeasts, cool to moderate fermentation temperatures and long maceration—to capture depth without harshness. The wine is then aged for an extended period, commonly in large neutral vessels or older barrels, to refine the tannins and build complexity without imposing heavy oak flavors, followed by bottling with minimal intervention to preserve authenticity.

For cheese, try aged hard cheeses like Comté, Manchego or a mature Tomme. Serve at 16–18°C (60–64°F); if the wine is opened in its youth or on the firmer side, a decant of 1–2 hours helps the aromatics open and allows the tannins to soften. Older bottles that have developed more tertiary notes can benefit from a gentler, shorter decant mainly to remove sediment.
