Domaine Launay-Horiot Les Chaponnières 2021 is an expressive red Burgundy that captures the wild, untamed side of Pinot Noir while remaining beautifully refined in the glass. Tasting Notes
In the glass, Les Chaponnières 2021 shows a deep ruby colour with youthful purple reflections along the rim. The nose is layered and inviting, opening with wild dark berries—think blackberries and black cherries—interwoven with notes of Indian spice, pine needles, damp forest floor and cremini mushrooms. With a little air, a subtle thread of smoked orange peel and hints of dried herbs emerge, adding further complexity.
On the palate, the wine is medium-bodied yet concentrated, with finely etched tannins and a lively, mouth-watering acidity that keeps everything in balance. The dark berry fruit is vibrant and pure, supported by savoury, earthy undertones and a gentle spice that lingers on a long, nuanced finish. Still youthful, this 2021 will drink beautifully in its early years after a short decant, but also has the structure to develop further complexity over the next 8–12 years under good cellaring conditions.
Production
Les Chaponnières sits in prime Pommard terroir in the heart of Burgundy’s Côte de Beaune, on well-drained limestone and clay soils that naturally limit yields and favour concentration. Domaine Launay-Horiot harvests by hand, allowing for careful selection of only the healthiest, ripest Pinot Noir grapes. In the cellar, the fruit is gently destemmed and fermented in temperature-controlled vats, with a mix of pump-overs and punch-downs to extract colour and fine tannins without harshness. The wine is then matured in French oak barrels, a portion of which are new, to add subtle structure and complexity while preserving the purity of fruit and the distinct expression of its Pommard origin.
Food & Serving
This wine has the depth and savoury nuance to pair beautifully with dishes such as roasted duck, lamb chops with herbs, coq au vin, or pork tenderloin with wild mushrooms. It also shines alongside richer poultry, game birds, or mushroom-based risottos and truffle-inflected dishes. Serve at 15–17°C for optimal expression of fruit and aromatics. Young bottles benefit from 30–60 minutes in a decanter to open up the nose and soften the tannins; more mature bottles can simply be opened ahead of serving and poured gently.
