Domaine Jonathan Didier Pabiot Eurythmie Pouilly-Fumé Bio is a deeply expressive, biodynamic take on Loire Sauvignon Blanc, crafted for drinkers who appreciate texture, nuance, and terroir detail. Sourced from limestone-rich vineyards and raised with minimal intervention, it offers a more contemplative, complex side of Pouilly-Fumé than the classic citrus-and-grass profile. Named after “Eurythmie” – the anthroposophical art of movement – this cuvée reflects the fluid harmony between vine, soil, and grower in one finely tuned white wine.

Tasting Notes
In the glass, Eurythmie shows a pale to medium straw-yellow color with bright green reflections, signaling both youth and freshness. The nose starts out subtle and slightly restrained, then opens gradually with air into layered aromas of ripe yellow stone fruit, citrus zest, and baked apple, interwoven with wild herbs, fennel, white flowers, and a gentle smoky-mineral note typical of Pouilly-Fumé’s limestone and flint soils. Classic Sauvignon Blanc characters are present but more refined and integrated than overtly punchy. On the palate, the wine is dense and concentrated yet strikingly precise and filigree. A fine, linear acidity carries flavors of yellow plum, quince, lemon oil, and ripe pear, wrapped in a creamy, almost velvety texture and a savory herbal edge. There is a distinct mineral backbone and a subtle, well-judged oak influence from élevage in large barrels, adding depth without dominating. The finish is long, saline, and nuanced, with a gentle smoky echo. While highly enjoyable in its youth with sufficient aeration, this cuvée has the structure and balance to develop additional complexity over 5–8 years, gaining more honeyed and nutty notes with time in bottle.

Production
The grapes for Eurythmie come from organically and biodynamically farmed vineyards in Pouilly-Fumé, rooted in limestone-driven soils that bring tension, salinity, and a refined mineral character to the wine. Vines are cultivated with great respect for biodiversity, with careful canopy management and low yields to ensure concentration and healthy, perfectly ripe fruit. Harvest is done selectively by hand, allowing only the best clusters to be brought to the cellar. Fermentation takes place spontaneously with indigenous yeasts, preserving the natural identity of the terroir. The wine is then aged in large oak foudres rather than small barriques, which allows for gentle micro-oxygenation and textural complexity without strong wood imprint. Sulphur additions are kept very low and applied only at bottling, resulting in a vibrant, pure expression of Sauvignon Blanc.

Food & Serving
This refined Pouilly-Fumé pairs beautifully with a wide range of sophisticated dishes: think oysters, scallops, and grilled prawns, as well as poached white fish with beurre blanc, goat’s cheese (especially Crottin de Chavignol), and poultry in light cream sauces. Its herbal and mineral notes also complement vegetable-based dishes such as asparagus, fennel gratin, or risotto with leeks and fresh herbs. Serve at 9–11°C to highlight its tension and aromatics. Decanting for 30–60 minutes is recommended, especially in its youth, as the wine benefits greatly from air, gradually revealing deeper layers of fruit, spice, and minerality.
