Domaine Jonathan Didier Pabiot Léon Pouilly-Fumé Bio 2022 is a refined, organically grown Sauvignon Blanc from one of Pouilly-Fumé’s most exciting young domaines. Crafted from old vines rooted in classic Loire limestone and flint, it offers depth, purity, and a distinctly mineral expression of the appellation. This cuvée “Léon” pays homage to family tradition while showcasing a modern, precise style that stands apart from more aggressively aromatic New World Sauvignon Blancs.

Tasting Notes
In the glass, this Pouilly-Fumé shines a pale straw to light gold, with brilliant clarity and a faint green glimmer at the rim. The nose is ripe yet restrained, weaving together juicy yellow stone fruit and a hint of blackcurrant leaf, layered with passion fruit, orange blossom, and a fine stony, gently smoky nuance that is so typical of great Pouilly-Fumé. The aromatic profile is complex and composed, without the overtly pungent “green” notes often found in more aggressive styles of Sauvignon. On the palate, the wine is surprisingly full and silky, with a soft, almost creamy texture from extended lees aging, balanced by a taut, linear acidity. Ripe orchard and citrus fruits mingle with herbal nuances and a cool, flinty minerality that carries through to a long, precise finish. There is notable depth and layering, suggesting that the wine benefits from plenty of air in its youth. Enjoyable now with a good decant, it also has the structure and concentration to evolve gracefully over the next 5–7 years, gaining even more complexity and savory nuance.

Production
The grapes for Léon come from various parcels with vines up to 50 years old, grown on a patchwork of limestone, clay-limestone, and silex (flint) soils—terroirs that are quintessential to Pouilly-Fumé and key to its signature smoky, mineral profile. Farming is certified organic, with careful work in the vineyard to limit yields and preserve the natural character of the fruit. Harvesting is carried out with a focus on optimal ripeness and healthy grapes, followed by gentle pressing. Fermentation takes place in a combination of stainless-steel and concrete tanks to safeguard freshness while allowing subtle textural development. The wine is then aged for 12 to 14 months on fine lees, which builds mid-palate weight, complexity, and a refined, polished mouthfeel without masking the wine’s crystalline minerality.

Food & Serving
This Pouilly-Fumé is a superb partner for classic Loire pairings such as goat’s cheese (Crottin de Chavignol, Valençay), as well as oysters, shellfish, grilled white fish, and simply prepared dishes of freshwater fish. It also works beautifully with sushi, sashimi, citrus-marinated ceviche, or herb-driven vegetable dishes and salads. Serve well chilled but not icy, ideally around 9–11°C (48–52°F), to allow the aromatics and texture to fully emerge. In its youth, give the wine a good 30–45 minutes in a carafe to let it open up; older bottles can be served directly from the bottle with a short time in the glass to evolve.
