Domaine Jonathan Didier Pabiot’s Pouilly-Fumé Aubaine is an organic, single-terroir expression of Sauvignon Blanc that captures the pure, limestone-driven character of the Loire. Crafted from old vines and raised patiently on its lees, this cuvée offers depth, precision and a quietly luxurious style that rewards attention. Named “Aubaine” – French for “stroke of luck” – it pays tribute to the exceptional Portland limestone (‘caillottes’) that gives the wine its finesse and signature smokiness.
Tasting Notes
In the glass, the wine shows a pale lemon to light gold hue with bright, silvery highlights that hint at its freshness and tension. The nose opens with refined notes of ripe lemon, yellow apple and white peach, layered with subtle gooseberry, white flowers and the classic Pouilly-Fumé flinty smokiness. With air, nuances of crushed oyster shell, grapefruit zest and a gentle herbal lift (fennel, fresh-cut grass) emerge, adding complexity without ever becoming loud or aggressive.
On the palate, Aubaine is precise and finely etched, combining a juicy core of ripe citrus and stone fruit with a racy, saline backbone. The texture is silky yet tightly wound, thanks to extended aging on the lees, giving a gentle creaminess that never masks the mineral drive. The finish is long, clean and chalky, with lingering notes of citrus peel, wet stone and a delicate, smoky echo. Enjoyable now with proper aeration, this vintage has the structure and acidity to evolve gracefully over 5–8 years, gaining more honeyed, nutty and tertiary nuances while preserving its mineral spine.
Production
Sourced from selected parcels within the lieux-dit *Les Champs de Cris* in Pouilly-Fumé, Aubaine is rooted in classic caillottes soils – very stony, fast-draining Portland limestone that naturally limits vigor and concentrates flavor. The vines, some up to 50 years old, are farmed organically (certified “Bio”) with low yields held around 35 hl/ha to maximize intensity and terroir expression. Harvesting is done by hand to ensure meticulous sorting in the vineyard. In the cellar, the Sauvignon Blanc grapes are gently pressed, and the must is fermented with care to preserve aromatic purity, then matured for an extended period (around 18 months) on fine lees in inert concrete tanks. This long lees aging builds texture and complexity without adding oak influence, allowing the pure mineral character of the site to take center stage.
Food & Serving
This Pouilly-Fumé is a natural partner for seafood and fine, delicately flavored dishes. Think oysters, scallops, grilled sea bass, sashimi and sushi, or simply prepared shellfish with citrus and herbs. It’s also superb with Loire goat cheeses such as Crottin de Chavignol, fresh chèvre, soft-ripened cheeses, asparagus dishes, spring vegetables and light poultry or veal in creamy lemon sauces. Serve chilled but not ice-cold, ideally around 10–12°C, to allow the aromatics to fully open. A short decant of 30–45 minutes is recommended, especially in its youth, to let the wine shed any initial restraint and reveal its full range of fruit and mineral notes.
