Description
Domaine Jean-Luc Mouillard’s AOP Macvin du Jura is a beautifully traditional Jura specialty, offering a rich, sweet, and highly expressive taste of the region. Made from Chardonnay and Savagnin, it combines fresh grape must with aged Marc du Jura, creating a wine with remarkable depth, authenticity, and a strong sense of place.
Tasting Notes
In the glass, it shows a golden hue with amber highlights. The nose is layered with ripe mirabelle, dried apricot, honey, candied citrus, toasted nuts, warm spice, and a subtle saline mineral edge.
The palate is silky, full-bodied, and intensely flavored, balancing sweetness with freshness and the gentle warmth of the spirit. Notes of caramel, dried fruit, and nutty complexity carry through to a long, warming finish. It has excellent complexity and can develop further nuance with time, though it is already generous and enjoyable now.
Production
Produced in the heart of Jura, where cool temperatures and limestone-rich soils shape wines of freshness and character, this Macvin follows a traditional regional method. Fresh Chardonnay and Savagnin must is blended with aged Marc du Jura in roughly a 2/3 must to 1/3 eau-de-vie ratio, which stops fermentation and preserves the grapes’ natural sweetness.
The wine is then aged for at least one year in oak barrels, adding depth, texture, and gentle oxidative complexity. The result is a classic Jura mistelle with both aromatic richness and a distinctly local identity.
Food & Serving
Serve slightly chilled, ideally around 8–10°C, to keep the sweetness lifted and the aromas vivid. No decanting is necessary. It pairs wonderfully with blue cheese, foie gras, fruit tarts, almond-based desserts, dried apricots, or simply as a contemplative after-dinner pour.
