Tasting Notes
In the glass, the 2022 Vaillons is a bright, pale lemon with green reflections, hinting at its youthful energy and freshness. The nose is immediately inviting: citrus (lemon zest, lime), green apple and white peach are layered over chalky minerality, wet stone, and a delicate floral nuance of hawthorn and acacia. Subtle hints of saline sea breeze and fresh butter or hazelnut peek through with air, signalling its Burgundian pedigree. On the palate, the wine is precise and vibrant, with a concentrated core of ripe citrus, orchard fruits and a cool, stony backbone. The texture is both silky and taut, with a fine line of acidity that keeps everything focused and long. Notes of lemon curd, crisp pear and a touch of grapefruit are framed by that classic Chablisienne salinity and a lingering, chalk-inflected finish. While already accessible and enjoyable in its youth, this 2022 Vaillons has the structure and freshness to develop further complexity over 5–8 years, gaining more nutty, honeyed and tertiary nuances with age.

Production
Vaillons is one of Chablis’ most celebrated Premier Cru vineyards, situated on Kimmeridgian limestone-rich soils embedded with ancient marine fossils—an origin that explains the wine’s trademark saline, mineral character. The slopes are generally south and south-east facing, allowing excellent ripening while preserving freshness. At Domaine Jean-Paul & Benoît Droin, meticulous work in the vineyards, often with sustainable and reasoned practices, ensures low yields and optimal grape quality. The Chardonnay is harvested at optimal ripeness, typically by hand, to maintain intact, healthy bunches. In the cellar, Droin is known for a thoughtful balance between stainless steel and oak: fermentation and élevage may occur partly in temperature-controlled tanks to preserve purity and partly in older barrels to add texture and complexity without masking terroir. The result is a wine that is both precise and expressive, with oak acting as a frame rather than a feature.

Food & Serving
This Chablis Vaillons 2022 is a natural partner for the sea: think oysters, scallops, langoustines, and simply grilled fish such as sea bass or turbot. It also shines with sushi and sashimi, fresh goat’s cheese, lightly sauced poultry, and vegetable dishes with a creamy or citrus element (such as lemon risotto or asparagus with hollandaise). Serve well-chilled but not icy, ideally around 10–12°C (50–54°F), to allow its aromatics and texture to unfurl. Young bottles benefit from a brief 15–30 minutes in a carafe or a wider glass to open up the bouquet and soften the initial edge of acidity.
