Sourced from Pinot Noir vineyards in Alsace, this Crémant benefits from the region’s cool continental climate and limestone- and marl-rich soils, which help preserve acidity and enhance finesse. Grapes are typically harvested by hand to ensure gentle handling and optimal selection, particularly important for rosé production from red grapes. After a soft pressing to extract just enough color, the base wine is fermented at controlled temperatures in stainless steel to lock in freshness and fruit purity. The traditional method is then used for the second fermentation in bottle, followed by aging on the lees to build texture, fine bubbles, and subtle autolytic notes before disgorgement and a carefully judged Brut dosage.
