Tasting Notes
In the glass, it shows a deep, mature garnet color with subtle brick tones at the rim, reflecting its age and pedigree. The nose is layered and expressive, with aromas of dark berries, black olives, pepper, smoke, wild herbs, and crushed stone, unfolding gradually with air. On the palate, it is powerful yet finely composed, with concentrated black fruit, savory spice, mineral tension, and a firm, silk-textured tannic structure. The finish is long and persistent, carrying notes of earth, herbs, and spice, and the wine still has the structure to continue evolving gracefully over many years.

Production
Jean-Louis Chave sources fruit from several of Hermitage’s most distinguished lieux-dits, where the terroir ranges from granite and schist to varied alluvial soils that bring both power and nuance. The grapes are harvested with great care, typically by hand, and vinification is carried out with a focus on preserving site expression, freshness, and structure before the wine is aged to integrate its dense Syrah character.

Food & Serving
This is a wine best served with rich, flavorful dishes such as roasted lamb, beef short ribs, venison, game birds, or slow-cooked stews with herbs and peppery seasoning. Serve at around 16–18°C, and decanting for one to several hours is recommended, especially for younger bottles; an older vintage like 1999 may only need a gentle decant to separate sediment.
