Tasting Notes
In the glass, this wine typically shows a deep garnet hue with mature ruby reflections, hinting at both concentration and evolution. The nose is layered and precise, opening with red forest berries, cherry, and raspberry, then moving into floral notes, subtle herbs, earthy forest floor, mineral tones, and a whisper of spice from oak aging.
On the palate, it is structured, focused, and beautifully balanced, with a vivid acidity that lifts the rich fruit core. The tannins are fine-grained and integrated, giving a velvety yet firm frame, while notes of vanilla, toasted wood, warm spice, and underlying salinity add complexity. This is a wine with excellent aging potential, and in magnum format it is especially well suited to continued cellaring, where tertiary aromas and deeper nuance can unfold over time.
Production
The grapes come from old-vine Pinot Noir parcels in the historic Clos de Vougeot, one of Burgundy’s most celebrated grand cru sites. The vineyard’s mid-slope position and intricate mosaic of limestone, clay, and alluvial soils contribute to the wine’s balance, power, and aromatic detail, while the Grivot family’s 1.86 hectares of contiguous holdings help ensure consistency and identity across vintages. Harvesting is carried out with care to preserve fruit purity, and vinification typically emphasizes traditional Burgundy methods followed by maturation in oak, including a meaningful proportion of new barrels to add structure and subtle spice without masking the vineyard’s character.
Food & Serving
This is a classic partner for refined dishes such as roast duck, pigeon, venison, braised beef, or mushroom-based recipes like risotto or a mushroom tart. It also works beautifully with aged cheeses. Serve at around 16–18°C, and if the bottle is still youthful, decanting for one to two hours can help the wine open up and reveal its full aromatic range.
