Domaine Jean Collet & Fils Chablis Valmur 2023 is a refined Chablis Grand Cru from one of the appellation’s most distinguished climats. Made from Chardonnay and matured in Burgundy oak, it combines Chablis’ characteristic freshness and mineral precision with a generous, textured style. The domaine was founded in 1952 and remains rooted in the heart of Chablis, with vineyards on both banks of the Serein.

Tasting Notes
The wine displays a bright, clear golden colour. Its aromatic profile is fruity and floral, with the freshness expected of fine Chablis complemented by subtle spicy nuances from its oak maturation. On the palate, it is elegant yet full-bodied, balancing depth and texture with a lively mineral character. The finish is long, polished and gently spicy. As a Grand Cru Chablis, Valmur has the concentration and structure to develop beautifully in bottle. The 2023 vintage can be enjoyed now with aeration, but should gain additional complexity over the next 6–10 years when well stored.

Production
The domaine’s vineyards occupy some of the finest slopes in Chablis, on both the left and right banks of the Serein. The estate follows a lutte raisonnée approach, limiting intervention in order to express the character of the terroir. The grapes are pneumatically pressed, followed by alcoholic fermentation and 18 months of maturation in 228-litre Burgundy oak barrels, giving the wine added depth while preserving its freshness and precision.

Food & Serving
Serve lightly chilled at around 10–12°C. This structured Chablis is an excellent match for lobster, langoustine and crayfish, as well as refined fish such as turbot and sea bass. It also pairs well with roasted white meats and mature goat’s cheeses. Decanting is not essential, but 20–30 minutes in a carafe can help the wine open, particularly when enjoyed young.

Producer
Domaine Jean Collet & Fils was established in 1952, with the next generation later strengthened by the arrival of Jean Collet’s son, Gilles. The winery and cellars are located in the centre of Chablis, while its 37 hectares are spread across Chablis Grand Cru, Premier Cru, Chablis and Petit Chablis vineyards. With 0.51 hectares of Grand Cru holdings and a philosophy centred on lutte raisonnée viticulture, the domaine is firmly connected to the identity and traditions of the Chablis region.
