Domaine J. Laurens Blanquette de Limoux Le Moulin Brut is a vibrant, traditional-method sparkling wine from the historic hills of Limoux in southern France. Made predominantly from the local Mauzac grape, it offers a delicious, characterful alternative to Champagne at a more approachable price. As one of the oldest sparkling wine styles in the world, Blanquette de Limoux carries centuries of heritage in every bottle, with Le Moulin standing out for its purity, finesse, and refreshing drinkability.

Tasting Notes
In the glass, Le Moulin Brut shows a pale straw color with shimmering green highlights and a fine, persistent bead. The nose is bright and expressive, featuring green apple, fresh pear, and white blossom, layered with notes of citrus zest, crushed herbs, and a subtle hint of brioche and almond from aging on the lees. On the palate, this Blanquette is crisp and lively, with taut acidity and a creamy mousse that gives the wine both energy and softness. Flavors of tart apple, lemon, and quince mingle with a gentle floral character and a touch of fresh bread dough, leading to a clean, mineral-driven finish. It drinks beautifully now for its freshness and verve, but can hold for a couple of years to develop a touch more roundness and complexity.

Production
Crafted in the rolling foothills of the Pyrenees in Languedoc-Roussillon, this wine comes from vineyards influenced by a cooler, elevated climate and limestone-clay soils that preserve acidity and aromatic intensity. The blend is dominated by Mauzac, the historic grape of Limoux, with small portions of Chardonnay and Chenin Blanc typically contributing finesse and structure. Grapes are harvested in the cool of the morning to protect freshness, then gently pressed. The base wines ferment in stainless steel to retain purity of fruit, followed by a second fermentation in bottle using the traditional method. Extended aging on the lees adds texture, fine bubbles, and subtle complexity before disgorgement and a carefully judged dosage to keep the style dry and refreshing.

Le Moulin Brut is a versatile sparkling wine that shines both as an aperitif and at the table. Enjoy it with oysters, shrimp, sushi, or simple seafood platters, as well as goat cheese, soft cheeses, tempura, light poultry dishes, or vegetable tarts. It also works beautifully with salty snacks and tapas-style bites. Serve well chilled at around 6–8°C. Decanting is not necessary; simply open the bottle a few minutes before pouring to allow the aromas to bloom in the glass.
