Tasting Notes
In the glass, the 2022 La Princee shows a pale straw to light gold hue with green reflections, hinting at its freshness and youth. The nose opens with vivid aromas of lemon zest, crisp green apple, and white peach, layered with hawthorn blossom, chalk dust, and a delicate touch of buttered brioche and hazelnut from its time in oak and on lees. On the palate, this is a taut yet generous white Burgundy, combining the ripeness of the 2022 vintage with Lamy’s hallmark cut and focus. Expect a mouthwatering core of citrus and orchard fruit—think Meyer lemon, yellow plum, and pear—wrapped in notes of wet stone, crushed shell, and a subtle creaminess. The acidity is bright and linear, giving the wine lift and drive all the way through a long, saline, and slightly smoky finish. While already delicious in its youth, the structure and mineral backbone suggest an aging potential of about 5–8 years from vintage, during which it will gain complexity, roundness, and more pronounced nutty, honeyed nuances.

Production
La Princee is a blend of several limestone-rich parcels around the cool, hilly commune of Saint-Aubin in the Côte de Beaune, an area prized for its high-altitude slopes, thin clay-limestone soils, and excellent natural drainage. These conditions lend the wine its finesse, minerality, and vibrant acidity. Grapes are typically harvested by hand to ensure careful selection of perfectly ripe, healthy Chardonnay clusters, with yields kept relatively low to concentrate flavor. In the cellar, the must is gently pressed and fermented with indigenous yeasts, often in a combination of stainless steel and mostly used French oak barrels, preserving nuance while adding texture. The wine is then aged on fine lees, with minimal bâtonnage, to enhance mouthfeel and complexity without sacrificing the purity and tension that define Lamy’s style.

Food & Serving
This Saint-Aubin is a versatile food wine, particularly well suited to refined yet simply prepared dishes. It shines alongside butter-poached or grilled white fish, scallops, oysters, and shellfish, as well as roast chicken with herbs, veal in cream sauce, or delicate vegetable dishes such as asparagus, fennel, or leek tart. It also pairs beautifully with mild, creamy cheeses like young Comté, Tomme, or fresh goat’s cheese. Serve at 10–12°C (50–54°F) to emphasize its precision and vibrancy. A brief decant of 20–30 minutes, or simply opening the bottle a little before serving, helps the aromatics unfurl and brings extra depth to the palate.

Hubert Lamy founded the domaine in its modern form in the 1970s, but it is under the stewardship of his son, Olivier Lamy, that the estate has gained a cult following for its incisive, terroir-driven whites.
