Domaine Hubert Lamy’s Saint-Aubin 1er Cru Derrière Chez Edouard Haute Densité is a striking Chardonnay from one of Burgundy’s most admired micro-parcels. Planted at extraordinary density on the upper slope, it delivers remarkable concentration, tension, and precision—an expressive example of why Olivier Lamy is regarded as one of the region’s most exacting and talented producers.

Tasting Notes
Pale gold in the glass, this wine opens with layered aromas of pear, peach, sweet citrus oil, and white flowers, followed by subtle honeycomb and a touch of toasty reduction. On the palate, it is medium to full-bodied, compact and deeply textured, with vivid acidity, a firm structural core, and impressive dry extract that gives the wine both weight and lift. The finish is long, electric, and mouthwatering, with the kind of energy that promises excellent development in bottle. While already compelling, it has the balance and concentration to age beautifully over the medium to long term, gaining nuance and depth with cellaring.

Production
This cuvée comes from Derrière Chez Edouard, an upper-slope Saint-Aubin 1er Cru parcel planted under Hubert Lamy’s Haute Densité regime, with vines reaching up to 30,000 plants per hectare. The extremely close planting encourages deep root competition and naturally low yields, resulting in fruit of great concentration and structure. Harvesting is done with careful selection to preserve freshness and purity, and vinification is handled with a restrained Burgundian touch to emphasize site expression, texture, and tension rather than overt oak influence.

Food & Serving
A wine of this intensity and precision pairs beautifully with lobster, scallops, poached turbot, roast chicken with mushrooms, or rich risotto with aged cheese. Serve slightly chilled, ideally around 10–12°C, and consider brief decanting if opening young to help the aromas fully unfold.
