Tasting Notes
The wine shows a bright, polished profile with aromas of pear, orange oil, toasted hazelnuts, and warm stones. On the palate, it is medium to full-bodied, with a dense yet silky core of fruit framed by chalky, mouthwatering structure and a long, precise finish.
Clos de la Chatenière has the balance and tension to develop beautifully in bottle, gaining additional complexity with time while preserving its freshness and clarity.
Production
This Premier Cru site in Saint-Aubin is known for its limestone-rich terroir, which lends the wine its saline edge and structural finesse. The fruit comes from old, virus-affected vines, a factor that often contributes to naturally low yields and concentrated expression. Vinification aims to respect the vineyard’s character, with careful handling to preserve purity, texture, and minerality.
Food & Serving
This Chardonnay pairs beautifully with roast poultry, shellfish, lobster, creamy risotto, and fine cheeses such as Comté or aged goat cheese. Serve slightly chilled, ideally around 10–12°C, and consider brief decanting if the wine is still very youthful to help open its aromatics.
