Domaine Hubert Lamy Criots-Bâtard-Montrachet Grand Cru ‘Haute Densité’ 2021 is a rare, ultra-fine white Burgundy from one of the most coveted Grand Cru sites in the Côte de Beaune. Produced in microscopic quantities—around 300 bottles—this cuvée comes from a parcel planted at exceptionally high density to push Chardonnay to its absolute limit of expression. In a frost-affected vintage where many vineyards suffered, this sole Grand Cru from Lamy was miraculously spared, resulting in one of the most striking and complete wines of 2021.

Tasting Notes
In the glass, the 2021 ‘Haute Densité’ is luminous and pale gold with green flashes, hinting at both its youth and underlying concentration. The nose is intricate and slowly unfurls with layers of orange zest, ripe pear, and fresh-baked bread, interwoven with iodine, crushed stone and delicate notes of roasted nuts. A subtle youthful reduction lends a flinty, smoky edge that promises further complexity with time in bottle. On the palate, the wine is full-bodied yet tightly coiled, with a striking, multidimensional core of citrus and orchard fruit wrapped in piercing, chalk-inflected acidity. The texture is dense and sinewy rather than opulent, driven by an abundance of saline, limestone-derived extract that gives both grip and length. The finish is long, resonant and deeply serious, lingering with notes of citrus oil, toasted hazelnut and maritime minerality. This is a Grand Cru built firmly for the cellar: while it can be approached with extended aeration, it will reward patience over 10–20+ years, gaining further complexity, breadth and harmony.

Production
Criots-Bâtard-Montrachet is a tiny Grand Cru vineyard in the southern part of the Côte de Beaune, just below Bâtard-Montrachet, rooted in thin, chalky-limestone soils with excellent drainage and a sun-kissed but breezy exposition. Lamy’s ‘Haute Densité’ parcel is planted at extremely high vine density, with young vines deliberately interplanted between old ones—an approach designed not to increase yields, but to intensify competition, resulting in smaller berries and naturally reduced production. Harvest is carried out by hand at optimal ripeness to preserve tension and aromatic purity. In the cellar, the wine is vinified traditionally: gentle pressing, fermentation and élevage in carefully selected oak barrels (with a restrained use of new wood), followed by extended aging on fine lees to build texture and complexity without sacrificing the crystalline character of the terroir.

Food & Serving
This profound Grand Cru Chardonnay deserves equally refined cuisine: think butter-poached lobster, scallops in a delicate beurre blanc, turbot or sole with morel cream, or roasted Bresse chicken with truffle and jus. It also pairs magnificently with rich shellfish, caviar, and aged, nutty cheeses such as Comté or Beaufort. Serve cool but not cold, around 11–13°C (52–55°F), to allow the aromatics to fully express themselves. In its youth, decanting for 45–90 minutes is strongly recommended to let the reduction blow off and the wine open up; with age, a gentle, shorter decant is sufficient to wake it from its slumber.
