Production
Les Chataigners is drawn from cooler, limestone-rich parcels around Saint-Aubin, where thin soils over fractured limestone and marl give the wine its striking tension and mineral profile. Vines are farmed with great care, using sustainable, low-intervention methods and rigorous hand work in the vineyard to control yields and preserve fruit purity. Harvest is done by hand, with strict sorting of the bunches to ensure only the healthiest grapes make it to the cellar. Fermentation typically takes place in oak barrels with indigenous yeasts, followed by élevage in a mix of older and a small proportion of newer oak to add texture without masking the terroir. The result is a Bourgogne Blanc with the structure and detail of a far more prestigious appellation.
