Tasting Notes
Bright and lively in the glass, this aromatic white wine opens with inviting notes of green apple and fresh-cut boxwood, a classic Sauvignon Blanc characteristic. The palate is fresh, juicy and flavourful, with a well-defined fruit profile and a clean, refreshing finish. Its freshness makes it particularly enjoyable in its youth, when the fruit and aromatic lift are at their most expressive. It can be enjoyed over the short term, although it is not intended as a long-term cellaring wine.

Production
The domaine’s approximately 18 hectares of vineyards lie along the banks of the Cher in and around Noyers-sur-Cher, at the heart of the Touraine appellation. The wine is made from Sauvignon Blanc and undergoes a long vinification and fermentation at low temperature, a process designed to preserve its bright fruit, floral-herbal aromatics and natural freshness. Specific harvesting methods are not provided.

Food & Serving
Serve chilled at approximately 8–10°C as an aperitif or pair it with fish dishes, seafood and shellfish preparations. Its lively acidity also works especially well with warm goat’s cheese. Decanting is not necessary; open shortly before serving to allow the aromas to emerge.

Domaine Gibault is a family-run estate based in the village of Noyers-sur-Cher in the Loire Valley. Pascal Gibault represents the third generation of the family to work at the domaine, with support from his wife, Daniëlle, and his brother Bernard. With vineyards positioned along the Cher and within the Touraine appellation, the estate is closely connected to the region’s Sauvignon Blanc tradition.
