Tasting Notes
In the glass, the 2019 vintage shows impressive concentration with a refined, luminous character. Aromas of dark cherry and blackberry are lifted by floral notes of violet and peony, while a subtle mineral edge and faint saline nuance add complexity and tension. On the palate, the wine is dense yet impeccably balanced, with intense fruit framed by vibrant acidity and polished tannins. It already offers a beautiful impression of elegance and structure, but it is built for long aging and should continue to evolve gracefully over many years.

Production
The wine comes from the prestigious Grand Cru Bonnes-Mares, where Domaine Georges Roumier owns vines planted on a mix of chalky marl and clay soils. The grapes are hand-harvested and vinified with great precision, including partial whole-cluster fermentation and spontaneous fermentation with native yeasts. It is then matured in oak barrels, with around 33% new wood, for approximately 16 to 18 months.

Food & Serving
This is an excellent match for refined dishes such as roast duck, pigeon, veal, mushroom risotto, or game birds. Serve at around 16–18°C to allow the aromatics and structure to show at their best. Decanting is recommended if opening young, especially to soften the tannins and reveal the wine’s full aromatic depth.
