Tasting Notes
In the glass, this Valmur shows a bright, luminous gold tone that hints at its maturity without losing freshness. The bouquet opens with honeyed apricot, ripe citrus, chalky mineral notes, and a subtle exotic spice, all unfolding with increasing complexity as the wine breathes. On the palate, it is broad and full-bodied, yet carried by a refined acidity that keeps the wine taut and energetic. Production
Made from Chardonnay grown in the Grand Cru Valmur vineyard in Chablis, this wine reflects the region’s classic limestone and Kimmeridgian marl soils, which are central to its signature mineral profile. 2016 was a particularly challenging growing season marked by frost and drought, but Raveneau’s strict selection and precise vineyard work allowed only the best fruit to make it into the final wine. The result is a vinification that emphasizes concentration, purity, and terroir expression.

Food & Serving
Best served slightly chilled, around 10–12°C, to preserve both the wine’s energy and layered aromatics. It pairs especially well with luxurious seafood dishes such as lobster, scallops, turbot, or roasted crab, as well as poultry in a creamy sauce or aged hard cheeses. Decanting is recommended if the bottle is showing particularly tightly on opening, though a short period in the glass is often enough for it to reveal its full complexity.
