Raveneau Chablis Grand Cru Valmur 1983 is a superb expression of aged Chablis, showing how beautifully Domaine Raveneau’s wines can evolve over decades. From one of the most prestigious Grand Cru sites in Chablis, this vintage combines depth, precision, and remarkable mineral character in a style that has made Raveneau one of Burgundy’s most revered names.

Tasting Notes
In the glass, it shows a mature golden hue, reflecting nearly four decades of graceful ageing. The nose is complex and refined, with dried citrus, honey, toasted nuts, and a distinct chalky minerality, lifted by subtle oxidative nuances that add depth rather than heaviness. The palate is silky and layered, with flavours of ripe apple, mushrooms, dried orchard fruit, and a delicate saline edge. Despite its maturity, the wine still carries a fine line of acidity that keeps it vibrant and balanced. This is a wine at its peak now, with little need for further ageing, but still capable of delivering an exceptional and deeply rewarding experience.

Production
Valmur is one of Chablis’ top Grand Cru vineyards, known for producing wines with power, structure, and pronounced mineral tension. The cool climate and Kimmeridgian limestone soils give Raveneau’s Chardonnay its hallmark precision and longevity, while careful harvesting and traditional cellar work preserve the site’s purity and complexity.

Food & Serving
This wine pairs beautifully with refined dishes such as lobster, roast turbot, scallops, or poultry in a light cream sauce, as well as mushroom-based dishes and mature cheeses. Serve at around 11-13°C, and decant gently if needed to open up the bouquet, though for a wine of this age, a careful pour into the glass may be preferable.
