Domaine François Raveneau’s Chablis Grand Cru Les Clos 1983 is a rare expression of mature white Burgundy, showing just how gracefully great Chablis can evolve over decades. From one of the region’s most revered sites and producers, it combines depth, finesse, and a distinctly mineral backbone that has become the hallmark of Les Clos.

Tasting Notes
In the glass, the wine remains remarkably alive, with a golden hue that reflects its long bottle age. The aromatics unfold slowly, offering dried fruit, beeswax, smoked nuts, and subtle oxidative nuances, all lifted by a precise chalky mineral note. On the palate, it is round, saline, and layered, with a balanced acidity that keeps the wine focused and elegant. The texture is broad and complex, and while it is no longer youthful, it still delivers impressive intensity, length, and energy. At this stage, it is best enjoyed for its mature complexity rather than cellaring potential, though well-stored bottles may continue to hold.

Production
Made from Chardonnay in the Grand Cru vineyard of Les Clos in Chablis, this wine comes from one of the most prized terroirs in Burgundy. The vineyard’s Kimmeridgian limestone soils are central to the wine’s firm structure and signature mineral precision, while the 1983 vintage has allowed the natural richness of the site to evolve into a deeply layered mature profile. Raveneau is known for meticulous vineyard work and restrained cellar handling, allowing the character of the site to lead the wine’s expression.

Food & Serving
This is a contemplative wine best matched with refined dishes such as roast turbot, lobster with beurre blanc, chanterelles, or aged comté. Serve it cool, around 12–14°C, to preserve its aromatics and texture. Decanting can be helpful for a short time if the bottle seems closed, but older bottles should be handled gently and tasted soon after opening.
